Great Gazpacho

Ingredients:

1 10-3/4-ounce can reduced-sodium condensed tomato soup
1-1/2 cups low-sodium tomato juice
1-1/4 cups water
1 cup chopped cucumber
1 cup chopped tomato
1/2 cup chopped green pepper
1/2 cup chopped onion
2 tablespoons white wine vinegar
1 tablespoon olive oil (optional)
1 tablespoon fat-free Italian salad dressing
1 tablespoon lemon or lime juice
1 clove garlic, minced
1/4 teaspoon black pepper
Several dashes bottled hot-pepper sauce
Dash Worcestershire sauce
Cucumber slices (optional)

1. In a large mixing bowl, combine the soup, tomato juice, water, chopped cucumber, chopped tomato, chopped green pepper, chopped onion, white wine vinegar, olive oil (if you like), salad dressing, lemon juice, garlic, black pepper, hot-pepper sauce, and Worcestershire. Cover and chill for at least 2 hours.
2. To serve, ladle soup into chilled bowls or mugs. Top each serving with cucumber slices and basil sprigs, if you like. Makes 6 side-dish servings.
